Jira already has a date field which you should use to capture the dates in proper format but in case you are using a text field for some really good reason even then you can validate the format using apps like #JMWE or #ScriptRunner

Once you delete an issue then it is gone for ever however in case you do need to delete issues or old projects then take backups or export issues outside Jira.

Using Jira macro you can display issues in a Confluence and also create reports but using that macro you can also display custom fields on your page. Very convenient and useful.

Automation rules can send scheduled emails based on JQL but sending one consolidated email can be a bit difficult, you will have to parse list of issues using smart values and in those cases filter subscriptions can do the job.
